We have one elderberry bush that grew here in the wild. It's skinny but we had enough to make a small bottle of elderberry syrup which is a cold remedy and good for prevention. We bought a couple of small saplings. One is already twice as big (but still small!) and the other might be dead. We might buy more varieties.

So, elderberries should not be eaten raw. They can cause nausea and vomiting. Plus, they are a bit sour. Much better cooked with honey added (that's pretty much the syrup recipe).

Flowers are safe to eat raw and I guess folks make elderflower wine. I'd much rather have the medicinal benefits of the berries, though!

That's good to know because it'll probably grow here if it can grow in upstate NY.
